    Chicken and more Chicken Some classic, some quick, some spectacular for company but ALL healthy and delicious! There will be whole chicken, chicken parts and what versatile skinless-boneless chicken breasts. We’ll use skillets and the oven to prepare and enjoy Chicken: Cordon Bleu, Marsala with Sage, Philippine style Adobo, Strip with Spicy Honey Dipping Sauce, With White Wine and Mushroom Sauce, Crab-Stuffed Breasts, Crispy Parmesan Strips, Italian Lemon, Lemon Kebabs, Pineapple-Raspberry Nibbles, Raspberry Lime and lastly Roasted with Mushrooms and Apples. Three recipes are great as appetizers, and the entrees will quickly become your favorites for family and friends.

    CZECH KOLACHES Kolaches are one of Czechoslovakia’s national pastries. Immigrants brought their passion (and recipes) for kolaches to the Midwest as early as the 1860’s. Kolaches are marvelous egg-rich, slightly sweet yeast dough. Traditionally filled with fruit mixtures such as apricot, cottage cheese, poppy seed or prune: they can be shaped in small round, square “tied packages”, or filled turnovers. We will make variations in class and taste samples. Plan to take home an assortment to share with family, friends, or to freeze. You will also leave with many recipes, tips and techniques to master these Old World delicacies. Better than the bakery!

    FONDUE FUN- GREAT FRIENDS NIGHT OUT! Tired of working in the kitchen? Solution-bring fondue to your table! Anytime is the right time for fondue- with family, guests or as a party. In the 18th century, creating a way to utilize hardened cheese and bread, the Swiss melted the cheese, added wine and dunked bread cubes into the mixture. The name itself came from the French word “fonder” which means to melt. We will create fondues from around the world: Traditional Cheese, Classic Swiss Cheese, Beef Bourguignonne, Crab, Bleu Cheese, and Tempura. Of course we’ll dunk delectable tidbits of fruit, cake or brownies in wonderful dessert fondues- Flavored Chocolates Fondues plus Butterscotch fondue. We will also make a variety of sauces and dips to round out the menu.

    Phyllo Pastry- Appetizers, Main Dishes, Desserts Did you know you could do so much with Phyllo? Don’t be terrified any longer of this paper-thin, frozen pastry. We will prepare and assortment of appetizers, main dishes and desserts all made with this amazing pastry dough. We’ll begin by preparing Phyllo Kisses, a fast 5-minute appetizer. Then hot, puffy, feta cheese triangles create a party atmosphere. Andy then can be made in advance, then frozen to be baked as guests arrive! Main dishes can use chicken and vegetable highlights, a such as fresh broccoli with a cheese sauce, rolled in this golden, crisp pastry. Of course, no class on phyllo would be complete without Baklava, loaded with nuts and saturated with honey syrup! After this evening, you will have conquered your fear plus you will receive an easy tip sheet create perfect results every time for other phyllo recipes too.

Get the scoop on Irish food plus historical notes on St. Patrick’s day. Smoked Fish Pate as an appetizer, Beef Braised in Guinness plus Beer Braised Pork Tenderloin for main dishes. From the humble potato come famous Colcannon (Mashed Potatoes with Cabbage) and delicious Cabbage with Bacon. Who does not adore homemade Irish Soda Bread? Wrap up your meal with splendid Jam Cake.
